Zucchini with bulgur and feta vegetable filling

Ingredients for 4 servings:

  • 2 zucchini (depending on size, preferably ball zucchinis)
  • 4 carrots
  • 2 bell peppers, colored
  • 200 g feta cheese
  • 1 bottle of tomato puree
  • 100 g bulgur, approx.
  • salt and pepper
  • Garlic
  • Paprika powder
  • vegetable broth
  • herbs, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Let the bulgur gravy swell in the tomato puree with a little water. Meanwhile, finely dice the vegetables and cheese. Add to the bulgur gravy. Season to taste. Hollow out the zucchini and place it in a baking dish. Fill with the bulgur, cheese, and vegetable mixture. I also add the rest of the filling to the baking dish. Bake at 200 degrees Celsius for about half an hour. Serve with fresh flatbread for a vegetarian version, or use it as a side dish with stir-fries.
