Ingredients for 1 servings:
- 2 m.-sized potatoes
- 125 g smoked tofu
- 1 handful of peas, frozen
- Olive oil, for frying
- Salt

Wash both potatoes and place them in a freezer bag (or other plastic bag) while still wet, tie a knot or seal with a rubber band. Pierce several times with a fork. Place on a plate and microwave at 800W for about 6 minutes. While the potatoes are cooking, thinly slice the tofu and fry in a large pan with plenty of olive oil. Once the tofu has reached a nice golden brown, push the slices to the side of the pan and add the peas. You don’t need any water or extra oil. Turn the peas frequently to thaw faster. Add a little salt if desired. Of course, you can also cook the tofu and peas in two pans, but I always do it in one to save on dishes (less to wash). And then the potatoes are done. Test by piercing them with a knife (through the bag) to see if they’re cooked. Very large potatoes will need about 2 minutes more, very small ones about 2 minutes less. The more often you microwave potatoes, the more in tune you’ll become with time. Then just peel the potatoes and arrange everything on a plate. Note: One of my absolute favorite dishes, even though it’s very simple! In just 10 minutes at the most, you’ll have a tasty and filling meal. The recipe is also ideal for a single person kitchen, as there are no leftovers that go to waste. Plus, (as a vegetarian) you usually have the ingredients at home and can cook it spontaneously without having to go shopping beforehand.
