15-minute gnocchi made from mashed potatoes

Ingredients for 2 servings:

  • 50 g mashed potato powder
  • 225 ml boiling water
  • 1 large egg(s), beaten
  • 1 tsp salt
  • 1 pinch of pepper, freshly ground
  • 200 g wheat flour
  • Flour , for the work surface

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Place the mashed potatoes in a medium bowl. Add the boiling water and mix well. Let cool. Add the egg, salt, and pepper. Add enough flour to form a firm dough. Place the potato mixture on a floured work surface and knead lightly. Divide the dough in half. Shape each half into a long, thin log. Cut into bite-sized pieces using a floured knife. Add the gnocchi to the boiling water in small batches. They are done when they float to the surface. Remove from the water with a slotted spoon and serve with a sauce of your choice. The gnocchi freeze very well. To do this, place the gnocchi on a baking sheet, freeze, and only then transfer them to freezer bags.
