4-3-2 chicken breast with tomatoes and cheese for the microwave

Ingredients for 2 servings:

  • 2 chicken breasts
  • 2 m.-sized tomatoes, sliced
  • 250 g Béarnaise sauce, tomato sauce or similar
  • 150 g cheese, sliced
  • 2 tbsp oil
  • basil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 9 minutes; Total time approx. 24 minutes

Make deep cuts on the top of the prepared chicken breast, approximately 3 x 1 cm deep. Season with salt and pepper and rub evenly with the oil. Place the chicken breast upside down – with the “ugly” side facing up – in a microwave-safe container (glass bowl with a lid) and cook in the microwave for 4 minutes, covered. Now turn the chicken breast over (now: with the “good side” facing up) and cook, partially covered, for another 3 minutes. Drain any excess liquid. Then pour the desired sauce evenly over the chicken breast. Arrange the tomato slices fan-shaped on top of the chicken breasts and season with a little salt, pepper, and basil. Now place the cheese slices on top of the chicken – double layering each – and gratinate for another 2-3 minutes (uncovered or partially covered). You can broil the dish briefly to allow the cheese to brown. Note: The microwave setting should be 800 watts. The chicken should be fully cooked before pouring the sauce over it! Rice, pasta, potatoes and/or bread are suitable as a side dish.
