Ingredients for 1 servings:
- 5 tbsp flour
- 4 tbsp, levelled sugar
- 3 eggs
- 2 tbsp oil
- 1 tbsp vinegar
- 1 tsp baking powder
- Vanilla sugar, as needed
- 1 pinch of salt

Mix the baking powder with the flour (a few heaped tablespoons for a shallow base, a few heaped tablespoons for a thick base) and sift, if possible. Separate the eggs and beat the egg yolks with the sugar until frothy. Whisk in the oil and vinegar, then stir in the flour. Finally, fold in the stiffly beaten egg whites, seasoned with a little salt. Pour into a greased springform pan and bake for 12-15 minutes in a preheated oven at 175 degrees Celsius. The springform pan allows you to quickly use the cooled cake base, especially if you’re continuing with gelatin.
