Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the pork fillet into 10 medallions (approx. 50g each), flatten slightly, season with salt, pepper, and paprika, and coat in a little flour. Brown the medallions in a hot pan for about 1.5 minutes on each side, remove from the pan, and keep warm. Briefly fry the diced onion in the same pan with a little fat. Now add the crushed garlic clove, cook for a while, and then add the bacon. Once crispy, add the drained mushrooms and sauté. Season with salt and pepper and add a little parsley. Meanwhile, spread a little hollandaise sauce on the slices of toast, place the bread on a baking sheet, and top with the ham. Preheat the oven to 220°C. Top the toast with the pork medallions, cover with mushrooms, and finally drizzle with a little hollandaise sauce. Place in the oven until golden brown (approx. 20 minutes). Salad goes well with it.
