Boil the potatoes, peel them, and mash or mash them with a fork. Let the potatoes cool, then knead all the ingredients together. Add seasonings if desired. Roll out the cookie dough on a floured surface to a thickness of 0.5 cm and cut out shapes or cut into long rectangles. Spread onto baking sheets lined with baking paper. This amount makes two full baking sheets. Bake at 180°C (top/bottom heat) for about 26 minutes until golden brown. Once cooled, store in a cookie tin; the cookies will keep for months.
