Minced beef and cheese mini meatballs

Ingredients for 1 servings:

  • 350 g minced beef
  • 1 egg(s)
  • 1 thin spring onion(s)
  • 3 cloves garlic
  • 1 large shallot(s), alternatively regular onion
  • 1 tbsp sugar, brown
  • 50 g cheese, grated, Emmental 45%
  • 3 tbsp flour, heaped
  • Sea salt, from the mill
  • Pepper, colorful, from the mill
  • chili flakes
  • Fat, for the pan

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel the shallot, slice it first, then dice it into small pieces, and place it on a plate. Peel the garlic cloves, finely dice them, and add them to the plate. Halve the spring onion lengthwise, cut it into very fine rolls, and add it to the plate. Heat the fat in a pan over medium heat, add the spoonful of sugar, and let it caramelize. Add the shallots, garlic cloves, and spring onion and sauté gently over low heat. Meanwhile, place the minced meat in a bowl, crack the egg over it, and sprinkle with the grated cheese. Add the sautéed contents of the pan, mix everything well, and season to taste. Add more fat to the pan and reduce the heat to medium. Pour flour into a bowl or dish, form small balls from the minced meat mixture, roll them in flour, and immediately place them in the pan. Process the entire mince mixture one after the other – I ended up with 26 mini frikos – of course, it depends on how big or small you roll the meatballs. I served them with mini spiral noodles and a chicory salad, but the sky’s the limit when it comes to your meal ideas. They heat up wonderfully in the microwave – the cheese makes them taste almost freshly made.
