- 1 kg elderberries
- 600 g elderflower syrup 1:2, unleavened
- 1 tonka bean(s), ground or grated
- 4 tsp agar-agar
- 1 ½ tsp citric acid

Spread only for lovers, elderberry jam with homemade elderflower syrup
The recipe for unleavened elderflower syrup is in the database. Combine the elderflower and syrup in a large saucepan and stir in the grated tonka bean. Bring the jam to a boil and stir. Dissolve the agar-agar in a little elderflower juice, stir in, and season with citric acid. Cook the jam for 5 minutes, stirring several times. Immediately fill the jam into prepared twist-off jars, seal with the lids. Turn the jars upside down and let cool. The total yield is approximately 1.45 liters. This is a 3:1 spread. For a 2:1 spread, you would need 1 kg of syrup for 1 kg of fruit. Opened jars must be refrigerated.
