Lavender rolls

Ingredients for 12 servings:

  • 500 g Flour, baking strong (Type 550)
  • 500 ml buttermilk
  • 20 g sugar
  • 1 point yeast
  • 3 tbsp lavender flowers
  • 1 tbsp, leveled salt
  • 1 egg(s), of which the egg white

Instructions

Working time approx. 25 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 25 minutes

Make a yeast dough from flour, a little sugar, buttermilk, and a pinch of salt. Knead thoroughly and let it rise for at least 2 hours. Place the lavender flowers in a hot pan and toss briefly. Briefly add the sugar and mix everything together. Knead 2/3 of the roasted flowers into the yeast dough and form 12 rolls. Let them rest for another 10 minutes, then place them in an oven preheated to 180°C. Lightly beat the egg whites with the sugar (not quite firm). After 10 minutes, remove the rolls from the oven, brush them with the egg whites, and sprinkle with the remaining lavender flowers. Finish baking; the rolls should not be too dark. Instead of sugar, you can also add lavender honey to the dough.
