Ingredients for 4 servings:

  • 1 chili pepper(s), cut into fine rings
  • 3 cans of tomatoes (400 g each)
  • 5 ml liquid smoke with hickory flavoring
  • 1 piece(s) Pepper, cut into fine rings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 200 ml mayonnaise or hamburger sauce
  • 1 lime(s), juice
  • 500 g chicken thighs
  • 2 garlic cloves, squeezed
  • 2 gherkins
  • 1 bunch of spring onions
  • 8 brioche rolls

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Preheat the grill or Dutch oven. Place 14 briquettes on top and 7 briquettes on the bottom. For the sauce, add the chili pepper, tomatoes, liquid smoke, hot peppers, garlic powder, and onion powder to the pot. Bring to a boil once, then add the chicken thighs. Pour the sauce over the chicken, cover, and cook for 1.5 hours. Remove the meat from the bones and mix everything together. Mix the mayonnaise with the lime juice and garlic. Season with salt and pepper. Heat the buns, slice the gherkins and spring onions. Spread the mayonnaise on the underside of the buns and arrange the meat on top. Top with the gherkins and spring onions, then fold the halves together.
