Bruschetta XXL with a twist

Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 250 g minced meat, mixed or beef
  • 1 small bell pepper(s), red
  • 1 small zucchini
  • 1 small eggplant(s)
  • 150 g herb cream cheese
  • 8 slices of butter cheese
  • salt and pepper
  • 2 slice(s) of bread(s) (bruschetta bread), large slices or 4 small

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Preheat the oven to 180°C (fan oven). Finely chop the onion and dice the bell pepper. Quarter the zucchini and eggplant lengthwise and slice them. Fry these ingredients separately in a pan and then combine them in a bowl. Now fry the minced meat in the same pan. Once everything is cooked, return all the vegetables to the pan, add the cream cheese, and season with salt and pepper. Top each bruschetta with two slices of cheese, spread the minced meat and vegetable mixture on top, then add two more slices of cheese on top and bake in the oven for about 10-14 minutes, until the cheese is nicely browned.
