Ingredients for 6 servings:
- 500 g minced meat
- 2 onions
- 2 garlic cloves
- 2 m.-large zucchini, sliced
- 2 bell peppers, diced
- 250 g mushrooms, sliced
- 4 tomatoes, peeled and diced
- 250 g rice (long grain)
- 400 g sheep’s cheese
- 1 bunch of chives
- some olive oil
- salt and pepper
- Paprika powder, sweet
- Oregano,
- basil
- rosemary
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes
Cook the rice in salted water until al dente. Meanwhile, heat a little olive oil in a pan and sauté the finely diced onions. Press in the garlic and sauté briefly. Add the minced meat and fry until crumbly, season with salt, pepper, and paprika. Transfer this mixture to a baking dish. In the same pan, toss the finely chopped vegetables, adding a little more olive oil if desired. Season everything with salt, pepper, and herbs and add to the minced meat. Add the cooked rice and mix gently. Crumble the feta cheese over the mixture and bake in the oven at 160°C for about 10-15 minutes; the cheese should only take on a very light brown color. Sprinkle with chives before serving.
