Ingredients for 4 servings:
- 2 large zucchini
- 1 m.-sized bell pepper(s), red or yellow
- 200 g cheese, grated, preferably Gouda
- 500 g minced meat, half and half
- salt and pepper
- Paprika powder
- Herbs

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes
Halve each zucchini lengthwise and scoop out the contents with a teaspoon to create a boat-like shape. Place the minced meat in a bowl and season with salt, pepper, paprika, and a few fresh herbs (e.g., parsley or salad herbs). Dice the bell peppers and mix in. Fill the zucchini halves with the minced meat. Preheat the oven to 180°C (top/bottom heat) and bake the zucchini boats for 30-45 minutes. Place either on baking paper or in a large casserole dish. About 10 minutes before the zucchini is done, sprinkle the grated cheese over the zucchini. The cooking liquid can be used to make a delicious sauce. Serve with rice as a side dish.
