Ingredients
- 1 smaller Cauliflower fresh
- 4 Spring onions
- 3 tbsp Rapeseed oil
- 400 g Ground beef
- 250 ml Vegetable broth, instant
- 250 ml Whipped cream
- 2 tsp Yellow curry paste
- 1 tsp Grated lemon peel
- 1 tsp Freshly squeezed lemon juice
- 100 g Basmati rice
- Salt
Instructions
- Cut the cauliflower into small florets. Peel the stalk and cut into cubes. Clean the spring onions, cut into rings. Heat the oil in a pan, fry the mince until light brown, add salt. Add the white part of the spring onions and fry briefly. Add the cauliflower and curry paste, fry for about 2 minutes. Pour in the vegetable stock and cream, bring to the boil Cover and cook over a medium heat for about 5-10 minutes.
- Season to taste with lemon zest and juice.
- Cook rice according to the instructions on the packet. Arrange cauliflower mince curry with rice on plates and serve sprinkled with the remaining onion rings.
