Cauliflower Minced Meat Curry with Rice

The perfect cauliflower minced meat curry with rice recipe with a picture and simple step-by-step instructions.

  • 1 smaller Cauliflower fresh
  • 4 Spring onions
  • 3 tbsp Rapeseed oil
  • 400 g Ground beef
  • 250 ml Vegetable broth, instant
  • 250 ml Whipped cream
  • 2 tsp Yellow curry paste
  • 1 tsp Grated lemon peel
  • 1 tsp Freshly squeezed lemon juice
  • 100 g Basmati rice
  • Salt
  1. Cut the cauliflower into small florets. Peel the stalk and cut into cubes. Clean the spring onions, cut into rings. Heat the oil in a pan, fry the mince until light brown, add salt. Add the white part of the spring onions and fry briefly. Add the cauliflower and curry paste, fry for about 2 minutes. Pour in the vegetable stock and cream, bring to the boil Cover and cook over a medium heat for about 5-10 minutes.
  2. Season to taste with lemon zest and juice.
  3. Cook rice according to the instructions on the packet. Arrange cauliflower mince curry with rice on plates and serve sprinkled with the remaining onion rings.
