Cauliflower Minced Meat Curry with Rice

Ingredients
 

  • 1 smaller Cauliflower fresh
  • 4 Spring onions
  • 3 tbsp Rapeseed oil
  • 400 g Ground beef
  • 250 ml Vegetable broth, instant
  • 250 ml Whipped cream
  • 2 tsp Yellow curry paste
  • 1 tsp Grated lemon peel
  • 1 tsp Freshly squeezed lemon juice
  • 100 g Basmati rice
  • Salt

Instructions
 

  • Cut the cauliflower into small florets. Peel the stalk and cut into cubes. Clean the spring onions, cut into rings. Heat the oil in a pan, fry the mince until light brown, add salt. Add the white part of the spring onions and fry briefly. Add the cauliflower and curry paste, fry for about 2 minutes. Pour in the vegetable stock and cream, bring to the boil Cover and cook over a medium heat for about 5-10 minutes.
  • Season to taste with lemon zest and juice.
  • Cook rice according to the instructions on the packet. Arrange cauliflower mince curry with rice on plates and serve sprinkled with the remaining onion rings.
