Dieter's chive sauce

Ingredients for 4 servings:

  • 3 shallots or one onion, diced
  • 4 garlic cloves, peeled, diced
  • 400 ml wine, white, dry
  • 400 ml cream
  • 100 g butter
  • 1 bunch of chives, large, cut into small rolls
  • nutmeg
  • Cayenne pepper
  • Worcestershire sauce
  • Sea salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with white wine and cream, reduced.

Sauté the shallots or onion and garlic in the butter until translucent. Top up with white wine and reduce by half. Add the cream and reduce by half. Strain the onions and garlic. Season with nutmeg, cayenne pepper, Worcestershire sauce, and sea salt. Whisk the sauce until foamy with a hand blender and stir in the chives.
