Dark onion sauce à la Didi

Ingredients for 6 servings:

  • 2 tbsp sunflower oil
  • 2 large onions
  • 500 ml gravy
  • 200 ml red wine, dry
  • 100 ml cola
  • 1 cup of espresso
  • 40 ml red brandy (Chantré rouge)
  • Sauce thickener, dark
  • e.g. salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Peel the onion and dice it into small pieces. Fry the diced onions in sunflower oil until light brown. Deglaze with red wine and add the meat juices. Add the cola, espresso, and brandy and simmer for 5 minutes. Thicken with a sauce thickener and season with salt and pepper.
