Ingredients for 1 servings:

  • 1 pc. puff pastry
  • 250 g quark (low-fat quark / low-fat curd cheese)
  • 1 packet of vanilla sugar
  • ½ lemon(s), grated peel
  • ¼ liter semi-skimmed milk
  • 1 packet of pudding powder (vanilla)
  • 40 g sugar
  • 150 g blueberries
  • 1 egg yolk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rinse the blueberries. Make a thick pudding with the milk and sugar according to the package instructions. Let it cool. Mix the low-fat curd cheese with the egg yolk, lemon zest, and vanilla sugar. Add the cooled pudding and mix well. Finally, carefully fold in the blueberries. Preheat oven to 220°C (top/bottom heat). Roll out the puff pastry, spread the curd cream on the first third of the puff pastry. Roll it into a strudel. Place on a baking sheet lined with baking paper and prick several times with a fork. Place in the preheated oven and bake for about 20 minutes.
