Apple and walnut cake

Ingredients for 1 servings:

  • 200 g walnuts
  • 2 tbsp brown sugar
  • 240 g margarine
  • 130 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • 180 g flour
  • 1 tsp baking powder
  • 1 kg apples, diced
  • some apricot jam for spreading

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 55 minutes

Line a 26 cm springform pan with baking paper (secure the baking paper with the ring) and fold up any excess paper. Place the walnuts side by side in the pan and sprinkle with brown sugar. Then scatter 60 g of margarine in small pieces on top. Bake in a preheated oven at 180°C for 10 minutes. Beat the remaining 180 g margarine with the sugar and vanilla sugar until fluffy, separate the eggs and add the egg yolks. Then mix the flour and baking powder and stir in. Beat the egg whites until stiff peaks and fold into the batter. Spread this over the walnuts, arrange the apple pieces on top and press down lightly. Bake the cake at 180°C for one hour. Spread the warmed jam on the cake while it is still hot.
