Nick's curry sauce

Ingredients for 1 servings:

  • 1 tbsp honey
  • 1 tbsp tomato paste
  • ½ bulb(s) garlic
  • 2 onions
  • 800 ml tomatoes, pureed
  • 6 tsp soy sauce
  • 3 tsp Worcestershire sauce
  • 500 ml cola
  • 2 tbsp olive oil
  • 1 shot of apple cider vinegar, milder
  • 6 tsp curry powder, mild spiciness
  • 2 tsp sweet paprika powder
  • 1 tsp smoked paprika powder
  • 1 tsp paprika powder, hot
  • 1 tsp black pepper, ground
  • ½ tsp allspice powder
  • ½ tsp nutmeg, freshly grated
  • ½ tsp cinnamon powder
  • ½ tsp chili flakes
  • 2 bay leaves
  • 1 organic lemon(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

Prepare the spice mix and set aside. Finely dice the garlic and onions. Lightly salt the onions and place them in a bowl. Reduce the cola in a saucepan until it is reduced to about 1/5. Meanwhile, add the olive oil and honey to another saucepan and caramelize the garlic (careful! Don’t let it burn!). Add the onions and their resulting juice, the tomato paste, and the spice mix, and sauté. Deglaze with the apple cider vinegar and wait until the vinegar smell has dissipated. Keep everything stirring constantly. Now add the passata, soy sauce, Worcestershire sauce, and the reduced cola, and simmer everything over low heat for at least 1 hour, stirring regularly. Finally, pass everything through a fine sieve and season with lemon zest and lemon juice, if desired. This goes wonderfully with fresh white bread or chips!
