Ingredients for 6 servings:

  • 350 ml red wine
  • 350 ml water
  • 2 packs of beef stock (beef paste)
  • 20 ml brandy
  • 2 tbsp tomato paste
  • 2 tsp honey, liquid
  • 1 tbsp Balsamic vinegar, dark
  • 2 tbsp cranberries
  • 1 onion(s)
  • 2 gherkins
  • 50 ml cucumber juice
  • 4 bay leaves, dried
  • 3 cloves
  • 1 tbsp lemon juice, freshly squeezed
  • 3 tbsp whipped cream
  • 2 tbsp sauce thickener, dark
  • possibly salt and pepper
  • possibly paprika powder
  • possibly cumin

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 50 minutes

with red wine and cranberries

Bring red wine to a boil with water and beef paste. Add brandy, tomato paste, honey, balsamic vinegar, cranberries, pickle juice, bay leaves, cloves, and lemon juice. Roughly dice the onion and gherkins and simmer the sauce over medium heat for about 45 minutes. Stir occasionally. Then strain the sauce through a sieve, bring back to a boil, and add the heavy cream and sauce thickener. Season to taste, adding salt, pepper, paprika, and turmeric if desired. Delicious with roast beef, pork, and venison, and paired with red cabbage, dumplings, or croquettes.
