Ingredients for 1 servings:
- 3 small onions
- 1 tbsp clarified butter
- 1 tbsp flour
- 300 ml broth
- 1 tsp tomato paste
- 2 tsp soy sauce, dark
- 2 tbsp red wine, dry, maybe more
- ½ tsp coriander powder
- salt and pepper
- 1 tsp Madeira
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Peel, quarter, and slice the onions. Gently fry in heated clarified butter until translucent. Set the pan aside, dust the onions with the flour, and stir in with a spoon. Return the pan to the stove and brown the onions in the roux, stirring constantly. Deglaze the onions with the stock and bring to a boil. Add the soy sauce, tomato paste, coriander, and red wine to the sauce. Simmer gently until the desired consistency is reached. Season to taste with salt and pepper, adding another splash of red wine if desired, and the Madeira wine before serving.
