Ingredients for 1 servings:

  • 300 g flour
  • 2 tsp baking powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 50 g butter or margarine
  • ½ small bottle(s) of rum flavoring
  • 2 m.-sized eggs
  • 100 g jam of your choice
  • 1 packet of sugar (vanilla-flavored decorative sugar)

Combine the flour and baking powder in a mixing bowl and mix. Add the remaining ingredients and mix everything with a hand mixer (dough hook), first on the lowest speed and then on the highest speed, until you have a dough. Wrap the dough in cling film and chill for 30 minutes. Then, on a lightly floured surface, roll out the dough to a thickness of about 3 mm and, using a pastry wheel, divide it into rectangles approximately 4.5 cm x 3.5 cm in size. Place half of the rectangles on a baking tray lined with baking paper. Using two teaspoons, place a hazelnut-sized dollop of jam on each rectangle. Place the remaining rectangles on top and press down the edges. Bake in a preheated oven at 200°C (top/bottom heat: 180°C, fan oven: gas mark 3-4) for about 10 minutes. Bake on the middle shelf and sprinkle with decorative sugar immediately after baking. Then leave to cool on a wire rack.
