Spinach pancakes

Ingredients for 4 servings:

  • 200 g flour
  • 3 eggs
  • 500 ml milk
  • 1 small onion(s), diced
  • 300 g spinach (frozen)
  • 2 tbsp water
  • 300 g cream cheese
  • 1 cup crème fraîche
  • 2 tbsp breadcrumbs
  • 200 ml milk
  • 1 cup of cream
  • 200 g cheese, grated
  • Salt
  • pepper
  • Fat for frying
  • n. B. garlic

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Make a pancake batter from flour, eggs and 500 ml milk, season with salt and pepper. Fry thin pancakes in batches and let cool. Sauté the onion, add the spinach and let it thaw with 2 tablespoons of water. Let cool slightly and then add the breadcrumbs, cream cheese and crème fraîche. Season to taste with salt and pepper (and maybe some garlic powder or a diced clove). Place 2 tablespoons of the spinach mixture on a pancake, roll it up and cut into 4-5 pieces. Place this roll upright in a baking dish. Repeat this process until all the pancakes are used up. Mix together 200 ml milk and cream, season with salt and pour over the casserole. Bake in a preheated oven at 200°C for approx. 30 minutes. Then remove from the oven, sprinkle with the cheese and bake for another 10 minutes. Serve immediately.
