Hot Paprika Sauce with Fried Meat Sausage and Pasta

The perfect hot paprika sauce with fried meat sausage and pasta recipe with a picture and simple step-by-step instructions.

  • 200 g Penne
  • 200 g Meat sausage
  • 1 Shallot
  • 1 Clove of garlic
  • 100 ml Vegetable stock
  • 3 tbsp Ajvar, spicy
  • 1 tbsp Sour cream
  • 3 Spring onions
  • Black pepper from the mill
  • Salt
  • Oil
  1. Bring enough salted water to the boil and cook the penne al dente in it. Everything else happens while the penne is cooking and is ready when the penne is al dente – so it really happens really quickly.
  2. Cut the meat sausage into cubes. Finely dice the shallot and finely chop the garlic. Cut the spring onions into thin rings.
  3. Heat some oil in a pan and fry the meat sausage cubes all around, then add the shallot and garlic and simmer until translucent and then deglaze with the vegetable stock and simmer for 2 minutes. Then stir in the avjar and sour cream – remove from heat and season to taste. Then lift the penne out of the water with a slotted spoon (it is desirable that a little cooking water is included in the sauce, this binds something and makes it easier to absorb the sauce) and add to the sauce and stir well.
  4. Then arrange in a bowl and pour a little freshly crushed pepper and the spring onion rolls over it.
