Ingredients for 3 servings:

  • 1 bunch of soup vegetables
  • 1 large potato(s)
  • 1 ½ liters of water
  • 250 g minced meat, mixed
  • Sea salt and pepper
  • 80 g rice
  • 1 cup of cream
  • 2 bunches of dill, chopped
  • ½ lemon(s), juice

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

fragrant, refreshing soup

Clean the soup vegetables and potatoes, dice them very finely, and add them to about 1.5 liters of salted water, but without the leeks first. Season the minced meat with salt and pepper and form into small balls. When the water boils, add the rice and cook for about 15 minutes. Then add the meatballs and leek. When the balls are cooked, pour in a cup of cream and add plenty of finely chopped dill to the soup. Season to taste with lemon juice, salt, and pepper. Tip: We’ve also used fresh bratwurst instead of the minced meat.
