Wild garlic cheese dumplings

Ingredients for 1 servings:

  • 30 g butter, room temperature
  • 2 eggs
  • 60 g Parmesan, grated
  • 3 tbsp breadcrumbs
  • 10 g wild garlic, finely chopped
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

quick, spicy soup garnish

Separate the eggs, beat the egg whites with a pinch of salt until stiff peaks, and set aside. Beat the butter and egg yolks until fluffy, then stir in the cheese, breadcrumbs, and seasoning. Whisk in the stiffly beaten egg whites and finely chopped wild garlic. Line a small baking dish with baking paper, pour the mixture into it, and spread it out until finger-thick. Place in an oven preheated to 150°C (fan-assisted) and bake for 15-20 minutes until golden brown. Remove from the oven, turn out onto a wire rack, remove the baking paper, and let cool. Using a sharp knife, cut into small squares, then into triangles. Outside of the wild garlic season, you can use any other herbs you like.
