Nettle and daisy soup

Ingredients for 2 servings:

  • 4 potatoes
  • 2 onions
  • 2 carrots
  • 50 g nettles, young leaves
  • 50 g daisies (green leaves just above the ground)
  • 1 handful of daisies (flowers)
  • salt and pepper
  • butter
  • 750 ml water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the potatoes, onions, and carrots, and cut the nettle and daisy leaves into strips. Sauté the onions, carrots, and green leaves in butter, add water, and add the potatoes. Season to taste. When the vegetables are cooked, garnish the soup with daisy petals before serving.
