Cream of mushroom soup

Ingredients for 4 servings:

  • 500 g mushrooms
  • 1 onion(s), finely diced
  • 40 g butter
  • 1 tbsp flour
  • 1 liter vegetable broth
  • salt and pepper
  • 200 g cream
  • 20 g butter, cold
  • 2 tbsp parsley, finely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

It beats any packet soup!

Finely chop the mushrooms or mince them. Sauté the onion in hot butter. Add the mushrooms and fry for 5 minutes. Dust with flour and fry until tender. Slowly add the broth, season with salt and pepper, and cook for 5 minutes. Blend in the cream and butter pieces with a hand blender. Stop cooking and season to taste. Serve sprinkled with parsley.
