Ingredients for 1 servings:
- 40 g fresh yeast
- ¼ liter milk, lukewarm
- 400 g wheat flour
- 50 g rye flour
- 60 g butter
- ½ tsp sea salt
- 1 pinch of cinnamon powder
- 1 egg(s)
- 1 tsp honey
Instructions
Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 25 minutes
Dissolve the yeast in lukewarm milk. Finely sift in the flour and knead with the dough hook. Now gradually knead in the melted butter, egg, cinnamon, sea salt, and honey. When the dough gets stuck or the dough has reached a good consistency, continue kneading with your hands on a floured surface or in a mixing bowl. Make sure to knead for at least 10 minutes. The dough should be soft and pliable rather than too dry. Cover the dough with a cloth and let it rise for 15-20 minutes in a warm, draft-free place. Grease a loaf pan well and spread the dough evenly. The pan should only be half full, as the dough will rise during baking. Cover the loaf pan tightly with a lid or aluminum foil and let the dough rise for another 10 minutes. Preheat the oven to 220°C. Then bake the bread for 25-35 minutes. The bread shouldn’t get too dark, as it goes into the toaster before eating. Be careful, otherwise the bread will be too dry! The honey and cinnamon give the bread an incomparable flavor and aroma that will make your mouth water just as it bakes! Warning: It’s addictive! 😀
