Sift flour into a bowl and make a well in the bowl. Crumble the yeast into the well and add the sugar. Mix 4 tbsp of milk and 200ml of warm water together, pour into the well, stirring in the yeast. Cover and let rise for about 10 minutes. Add salt, 1 beaten egg and butter and knead everything well with the dough hook of a hand mixer for about 5 minutes. Cover and let rise in a warm place for about 1 hour. Place the dough on a floured surface, divide into 10-12 portions and roll into balls. Place the balls on a baking tray lined with baking paper and flatten them. Cover and let rise for about 45 minutes. Beat 1 egg with 2 tbsp of water and 2 tbsp of milk. Brush the balls with the mixture and sprinkle with sesame and caraway seeds if desired.
