crispy, light, airy

Dissolve the yeast and sugar in the lukewarm milk and let rest for 5 minutes. Meanwhile, mix the remaining ingredients. After 5 minutes, add the yeast mixture and knead for at least 5 to 8 minutes until you have a smooth and supple dough, adding a little more flour if necessary. Place the dough on a floured work surface, shape it into a ball, and cover and let rise for 1 hour. The dough should have doubled in size. Then sprinkle the work surface and dough with flour and roll out into a round shape. The dough should be no thinner than 1 cm. Cut this round circle into 6 or 8 cake slices and place them individually on a baking sheet lined with baking paper and dusted with flour. Sprinkle the toasties again with flour and cover and let rise for about 40 minutes. They should have doubled in size. Preheat the oven to 180°C (top/bottom heat). Place the toasties in the center of the preheated oven and bake for about 15 minutes.
