Ingredients for 1 servings:

  • 200 g sugar
  • 125 ml water, hot
  • 4 egg yolks
  • 4 egg whites
  • 100 g flour, type 405
  • 100 g cornstarch
  • 1 packet of baking powder
  • 2 tbsp cocoa powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Line a springform pan with baking paper. Preheat oven to 200°C (top/bottom heat) (180°C for fan oven). Dissolve the sugar in the hot water and stir briefly until cold. Gradually stir the four egg yolks into the sugar and water and beat in a food processor for several minutes until well-puffed. Beat the four egg whites separately until stiff peaks form. Sift together the flour, cornstarch, baking powder, and cocoa powder. Carefully fold the egg whites and flour mixture into the egg yolk mixture, pour into the prepared springform pan, and bake on the middle rack for 20-30 minutes (test with a toothpick).
