Ingredients for 1 servings:

  • 2 eggs
  • 2 tsp candied lemon
  • 200 g sugar
  • 270 g desiccated coconut
  • 160 g apricot(s), dried
  • 45 wafers

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

for approx. 45 pieces

Finely dice the dried apricots. Beat the eggs with sugar and candied lemon peel until frothy. Add the desiccated coconut and apricots and stir in. Let the mixture rest for about 30 minutes. Line two baking sheets with about 45 baking sheets. Place small mounds of dough on top using two teaspoons. Bake in a preheated oven at 140°C (284°F) for about 10 minutes until golden brown. Let cool, then enjoy.
