Ingredients for 1 servings:

  • 7 g yeast, fresh
  • 260 ml water, lukewarm
  • 250 g flour
  • 400 g flour
  • 170 ml water, lukewarm
  • 8 g yeast, fresh
  • 10 g salt
  • 3 tbsp olive oil
  • fried onions
  • Flour for dusting

Pre-dough: To make the pre-dough, mix the yeast with the water in a bowl until the yeast dissolves. Stir in the flour and let the pre-dough rise for at least 12 hours. It’s important that the dough gets some air, so you can, for example, make small holes in the cling film or aluminum foil, or cover the dough with a cloth. Main dough: Mix the pre-dough with the ingredients for the main dough. If desired, add fried onions or something else. Knead and let rise for 60 minutes. Shape the dough into two ciabatta loaves, score them, and bake at 200°C (top/bottom heat) for 30 minutes.
