Cheese spaetzle Italian style

Ingredients for 4 servings:

  • 500 g egg noodles
  • 150 g bacon cubes
  • 1 large onion(s)
  • 200 g Gouda, in one piece
  • 10 cocktail tomatoes
  • 10 basil leaves
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

For the spaetzle, bring a large pot of water to a boil. Dice the onion and then grate the Gouda cheese. Cook the spaetzle according to the package instructions for about 3 minutes. Meanwhile, fry the diced onion and bacon in oil and season with salt and pepper. Preheat the oven to 180°C (top/bottom heat). Drain the cooked spaetzle and place some of the spaetzle in a baking dish. Spread some of the onion and bacon mixture over the top. Continue cooking until all of the spaetzle and the onion and bacon mixture have been used up. Sprinkle the spaetzle mixture with the Gouda cheese. Place the baking dish on the middle rack of the oven to bake until the cheese is golden brown. In the meantime, halve or quarter the tomatoes and finely chop the basil. Place the tomatoes and basil on top of the baked spaetzle and serve.
