Semolina – potato casserole with apple or raisins

Ingredients for 4 servings:

  • 300 g potatoes, boiled (approx. 4 – 5 medium-sized)
  • 250 g semolina
  • 150 g sugar
  • 25 g butter, soft
  • 1 egg(s)
  • 100 g raisins or 1 – 1 1/2 apples (125 – 180 g)
  • 1 lemon(s), untreated, zest
  • 500 ml milk
  • Breadcrumbs for the mold
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Finely grate the cooked potatoes or mash them well with a fork, mix with the semolina, sugar, softened butter, egg, lemon zest, and raisins or apple. Gradually add the milk and stir in. Grease a baking dish and sprinkle with breadcrumbs. Pour in the potato mixture and bake in a preheated oven at 180°C for about one hour. Tastes especially good with applesauce or compote. Another alternative to raisins and apples is dried fruit; you can use a little less sugar if necessary.
