Ingredients for 1 servings:
- 500 g wheat flour type 405
- 350 ml water, lukewarm
- 2 tsp sugar
- 1 tsp salt
- 1 tbsp oil
- 3 tbsp flaxseed
- 2 tsp chia seeds
- 1 cube of fresh yeast
- 3 tbsp basil pesto
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 20 minutes
for a loaf of bread of approx. 500 g
Put the flour in a bowl. Make a well in the flour with your hand and crumble in the yeast. Now add the flaxseed, chia seeds, sugar, salt, and oil to the yeast. Mix the ingredients well using the dough hook of a hand mixer, gradually adding the warm water and kneading everything well until a smooth dough forms. Now add the pesto to the dough and mix well again. Let the dough rise in a warm place for 30 minutes. Preheat the oven to 180°C (top/bottom heat). When the dough has at least doubled in size, place it with floured hands on a floured work surface and knead vigorously with your hands until the dough no longer sticks to your fingers. If the dough is still too sticky, dust it with flour. Shape the dough into a loaf, place it on a baking sheet lined with baking paper, and brush with water. If you want, you can also score the bread for a nicer look. Bake on the middle rack for 35-40 minutes. Let the bread cool completely on a wire rack.
