Ingredients for 1 servings:

  • 250 g pumpkin flesh
  • 3 tbsp water
  • ¼ liter of milk
  • 3 tbsp sugar
  • 40 g butter
  • 500 g wheat flour
  • 30 g yeast
  • 1 tsp salt
  • 40 g hazelnuts, ground

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Simmer the pumpkin flesh with a little water (3 tbsp) until soft, mash, and let cool. Gently warm the milk, add the yeast and sugar, and let it rise for 30 minutes. Combine all ingredients in a large bowl and knead vigorously. Let rise for another 30 minutes, then knead again. Transfer the dough to a loaf pan and let it rise for another 30 minutes, until it has significantly increased in size. Place in a cold oven and bake at 170°C for 50 minutes. Brush cold water over the dough and bake for another 5 minutes. This creates a delicious crust.
