Plum Cake or Cherry Cake with Marzipan
The perfect plum cake or cherry cake with marzipan recipe with a picture and simple step-by-step instructions.
- 750 g Plums
- 200 g Organic sweet cream butter
- 150 g Brown raw cane sugar
- 4 piece Organic eggs size M
- 150 g Organic whole wheat flour
- 2 teaspoon Baking powder
- 100 g Ground almonds
- Cut the plums in half (I didn’t cut them all the way, but halving is better). Preheat the oven to 160 degrees.
- Mix the softened butter with the cane sugar until creamy. Then stir in the eggs one by one.
- Mix the flour, baking powder and almonds and add, stir everything well for a moment.
- Line a springform pan with parchment paper and spread the batter on it, cover with the plums.
- Bake for 40 minutes at 160 degrees, then for another 10 minutes at 180 degrees. Take the cake out of the oven and let it cool down.
- Tastes great with whipped cream.
- Recipe variant cherry cake: I made the recipe the second time as a cherry cake, see photo. Instead of plums, simply take cherries out of the glass and drain them beforehand. I poured in about 3/4 of the dough and then spread small flakes of marzipan mixture, the remaining dough and then the cherries on top. Sprinkle with cane sugar and cinnamon 5 minutes before the end of the baking time.
