Cake: Marzipan and Plum Slices …..

The perfect cake: marzipan and plum slices ….. recipe with a picture and simple step-by-step instructions.

  • 2 kg Plums
  • 200 g Marzipan raw mass
  • 8 piece Eggs size M
  • 300 g Soft butter
  • 300 g + 3 tbsp Zucker
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 500 g Wheat flour
  • 1 packet Baking powder
  • 1 tsp Lemon juice
  • 50 g Flaked almonds
  • 2 tbsp Hail sugar to decorate
  • Fat for the baking sheet approx. 35 x 40 cm

Preparation:

  1. Clean and wash the plums. Dice the marzipan and separate 2 eggs.

For the dough for approx. 20 pieces …..

  1. 2 …… stir the softened butter, 150 g sugar, vanilla sugar and salt until creamy and fold in the marzipan cubes. Now gradually stir in 6 eggs and 2 egg yolks. Mix the wheat flour and baking powder and stir in SHORtspY in portions.

For the baking process ….

  1. 3 ….. spread the dough on a greased baking sheet. Spread the plums close together and sprinkle with 3 tablespoons of sugar. Bake in a preheated oven at 175 degrees (convection = 150 degrees) for about 40 minutes.

For meringue …

  1. 4 ….. 2 eggs and lemon juice until stiff. While still beating, pour in 150 g of sugar and continue beating until it has completely dissolved.

Baier is really stiff when a knife stab remains visible and you can turn the bowl!

  1. Pour into a piping bag WITH STAR TUBE and squirt about 20 meringue tuffs onto the cake. Bake for another 10 minutes at the same temperature. Then sprinkle the cake with flaked almonds and bake for another 10 minutes at the same temperature. Then let cool down completely.
  2. Serve the plum cake sprinkled with sugar!
