Ingredients for 1 servings:
- 1 small ciabatta or panino, preferably with herbs, halved
- 4 tomatoes, dried in oil, drained
- 1 tbsp olive oil
- 2 leaves of Radicchio Treviso, cleaned, with thick midribs removed
- 30 g Provolone dolce, sliced
- salt and pepper
- possibly vegetables
- possibly arugula
- possibly salami
- possibly Parmesan
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Italian-inspired snack
Drizzle the sliced bread halves with olive oil. Place the radicchio leaves on the bottom half, season with salt and pepper. Scatter the tomatoes over the top, then top with the provolone and place the top half of the bread on top. Tastes delicious both cold and gratinated. (You may want to omit the radicchio when gratinating or add it later; it tastes good warm too, but doesn’t look as attractive.) Variations are possible, e.g., with arugula, fennel salami, Parmesan, vegetables steamed in oil, etc.
