Rhubarb – Apple – Jam

Ingredients for 1 servings:

  • 600 g rhubarb, peeled and weighed
  • 400 g apples, peeled and weighed
  • 1 vanilla pod(s)
  • 1 pinch of coriander
  • ½ tsp cinnamon
  • 500 g gelling sugar (2:1)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

for approx. 6 glasses of 230 ml each

Peel the rhubarb and apples. Core the apples and dice them finely. Score the vanilla pod lengthwise and scrape out the seeds. Mix the vanilla seeds and pod with the remaining spices, apple and rhubarb cubes, and gelling sugar. Let it steep for 1-2 hours. Then bring to a boil, stirring occasionally, and simmer gently for about 4 minutes. Remove the vanilla pod and immediately fill the jam into twist-off jars. Close tightly and let stand, upside down, for 5 minutes.
