Sour cherry jelly with amaretto and vanilla

Ingredients for 1 servings:

  • 1 liter of sour cherry juice
  • 3 vanilla pods
  • 1 kg gelling sugar, 1 : 1
  • 4 cl Amaretto

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Get a liter of freshly squeezed (!) sour cherry juice from your trusted fruit farmer and pour the juice into a large pot. Carefully split the vanilla pods and scrape out the seeds. Add them to the sour cherry juice. Note that the vanilla seeds will only dissolve shortly before filling the jars; so don’t worry if the black threads float in the juice for a while. Now add the gelling sugar. Bring everything to a boil while stirring, then let it simmer for four minutes. Finally, add the 4 cl Amaretto (2 shot glasses) and stir thoroughly again. Then pour the jelly, while still hot, into the prepared jars and seal immediately. This recipe makes 6 jars of 125 ml each.
