Diet – Elderflower – Jelly with Flowers

Ingredients for 1 servings:

  • 2,700 ml apple juice, naturally cloudy direct juice (no concentrate)
  • 20 elderflower heads
  • 3 bags of Gelfix Super
  • 1 kg fructose
  • Elderflower umbels for the glasses

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

Soak the elderflowers in the apple juice for about 2 days, then strain through a cheesecloth. Mix the fructose with the gel-fix and add to the juice. Boil gently for at least 3 minutes. Pick a few elderflowers into the prepared twist-off jars, then pour the hot jelly over them and turn them upside down for 5 minutes. Turn the jars over frequently so the flowers are distributed throughout the jar as they cool. I got 13 jars of 230 ml each.
