Apple pancakes from the oven

Ingredients for 4 servings:

  • 200 g flour
  • 3 eggs
  • 1 pinch of salt
  • 250 ml milk
  • 1 shot of mineral water
  • 5 apples (e.g. Boskoop) or other fruit
  • 3 tbsp sugar
  • 1 tsp cinnamon

Preheat the oven to 240°C (fan-assisted). Line a baking sheet with parchment paper and heat until hot. Whisk together the flour, eggs, salt, milk, and mineral water to form a batter. Peel and quarter the apples, and remove the cores. Then cut into 1 cm thick wedges. Mix the sugar and cinnamon. Spread the pancake batter evenly on the baking sheet and arrange the apples on top. Sprinkle the cinnamon sugar over everything and bake in the middle oven rack for 10-15 minutes, until golden brown. TIP: Instead of apples, you can also make the pancakes with ripe pears, cherries, plums, or apricots.
