Semolina porridge with cherries

Ingredients for 4 servings:

  • 1 jar cherry(s) (720 ml)
  • 1 pack of pudding powder (vanilla), for cooking
  • 1 packet of vanilla sugar
  • 1 ¼ liters of milk
  • 120 g sugar
  • 60 g butter
  • 160 g semolina (soft wheat semolina)
  • 2 eggs
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Drain the cherries, reserving the juice. Mix the pudding powder with the vanilla sugar and stir in 6 tablespoons of the juice until smooth. Bring the remaining cherry juice to a boil, then remove from the heat. Stir in the mixed pudding powder and simmer for about 1 minute while stirring. Stir the cherries into the thickened juice. Bring the milk, butter, and sugar to a boil. Remove the pan from the heat and sprinkle in the semolina while stirring. Bring to a boil once while stirring. Cover and let stand for about 5 minutes. Separate the eggs. Beat the egg whites with salt until stiff. Stir the egg yolks into the porridge, then fold in the egg whites.
