Ingredients for 4 servings:
- 500 g carrot(s)
- 1 apple
- 1 lemon(s)
- 1 onion(s)
- Balsamic vinegar, white
- Oil (sunflower or olive oil)
- salt and pepper
- 1 pinch(s) of sugar

Squeeze the lemon into a bowl. Then finely slice the apple and add it (lemon to prevent it from browning). Peel and finely grate the carrots (this is really quick with a food processor) and add it. Finely chop the onion and add it. Then simply toss in the vinegar and oil (about 50:50; if it’s too bland, add a little more vinegar). Season to taste with salt, pepper, and sugar. You can let it sit for a bit longer, but it’s not necessary.
