Blueberry pancakes

Ingredients for 4 servings:

  • 175 g flour
  • 200 ml buttermilk
  • ½ tsp baking powder
  • 1 pinch of salt
  • 1 tbsp sugar
  • 2 eggs (size L)
  • 4 tbsp butter, melted
  • 150 g blueberries
  • 2 tbsp oil
  • Powdered sugar for dusting
  • some cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the flour with buttermilk, baking powder, salt, and sugar until smooth. Let it rest for about 20 minutes. Then add the washed and sorted blueberries. Stir in the eggs and melted butter. Heat a little oil in a pan. Fry the batter in batches until golden brown. Dust the pancakes with a mixture of powdered sugar and cinnamon.
